Curried Beans and Brown Rice

Use quantities of rice and ground pork to suit the number of servings.

What you’ll need:

Brown rice

Medium size sweet yellow onion

3-4 cloves of garlic- finely chopped

Olive oil

Ground pork

Curry powder


salt seasoning to taste

Can of no salt added organic black beans

Prepare rice according to package instructions. When the rice is almost done, sauté chopped onion and garlic in 2 tablespoons of olive oil. Add the ground pork and season with the curry and no salt seasoning. Add the black beans in their liquid. Add rice and stir. Taste and add additional seasonings as needed. Serve this with a fresh green salad.
